Egg Curry




Ingredients:

  • 1 bay leaf, 1 inch cinnamon, 1 cardamom, 1 clove
  • 7-8 eggs: boiled, peeled and  fried till slightly golden brown
  • Oil to fry the eggs
  • About 1 tablespoon oil to cook curry
  • Turmeric, 1 teaspoon chill powder, sugar(optional), salt to taste

Procedure:

  • Chop 1 big onion into slices, and grind in mixer.
  • Chop 1 big tomato and grind to paste.
  • Heat little oil, add bay leaf, cinnamon, cardamom, clove. 
  • After 45 sec, add onion paste, Let it simmer.
  • After 5 min, add tomato paste, let simmer for 10 min. Add pinch of turmeric, chili powder, salt and sugar to taste.
  • Once the gravy thickens a bit, add eggs. Simmer covered for 5 min.
  • Garnish with coriander leaves.
