Ingredients:
- 1 bay leaf, 1 inch cinnamon, 1 cardamom, 1 clove
- 7-8 eggs: boiled, peeled and fried till slightly golden brown
- Oil to fry the eggs
- About 1 tablespoon oil to cook curry
- Turmeric, 1 teaspoon chill powder, sugar(optional), salt to taste
Procedure:
- Chop 1 big onion into slices, and grind in mixer.
- Chop 1 big tomato and grind to paste.
- Heat little oil, add bay leaf, cinnamon, cardamom, clove.
- After 45 sec, add onion paste, Let it simmer.
- After 5 min, add tomato paste, let simmer for 10 min. Add pinch of turmeric, chili powder, salt and sugar to taste.
- Once the gravy thickens a bit, add eggs. Simmer covered for 5 min.
- Garnish with coriander leaves.
